Domaine Jean Dauvissat Père et Fils is a renowned winery with 53 plots covering a total area of 22 hectares in 7 communes of Chablis, producing wines under the labels of Petit-Chablis AOC, Chablis AOC, and Chablis Premiers Cru AOC.
The philosophy of Domaine Jean Dauvissat Père et Fils revolves around allowing the terroir to express itself fully, solidify, and preserve these results. Every action, from the first prunings to bottling, follows this rule. Intervention is only allowed to help the vines showcase their best potential. The vineyards practice targeted pruning, bud removal, and the use of organic fertilizers. Since 2011, no chemical herbicides or insecticides have been used.
Since 2018, biodynamic methods have been implemented to enhance the health and natural immunity of plants and soil. Balance and good soil structure are achieved through mechanical processing, shredding of pruned shoots, and the addition of compost with special cover crops grown during winter as fertilizer.
In 2019, the winery applied for organic certification, with the transition process expected to be completed by 2022. The winery's approach is centered on the belief that wine is made in the vineyard, not the cellar. Therefore, only healthy grapes of optimal ripeness that have undergone rigorous selection and sorting enter the vinifiers. Grapes from each individual plot undergo separate fermentation, without the use of commercial yeast strains. Depending on their initial quality, wines are given one to two years to mature. Finally, the wines undergo lightening with bentonite or isinglass and gentle filtration.
This meticulous process gives birth to refined, terroir-driven, elegant wines that undergo a long journey filled with hard work, patience, and enthusiasm before they reach your glass. Fabien, the son of Jean Dauvissat, is now responsible for winemaking and was the one to introduce the organic approach to viticulture.
